Grilled Peaches with Honey Herb Yogurt

Sometimes I have weird ideas for recipes. I have a list in the notes app of my iPhone that I keep all these hair-brained ideas for things I’d like to cook up and blog about. I’d say about 80% of the time, the dish turns out really good and “blog-worthy”. Other times, not so much. Then there’s a handful of times where I really surprise myself and totally knock it out of the park. Those dishes where you taste the first bite, your eyes grow wide, and you think – “wow, this is amazing!” and by the time you’ve scarfed it down in a few minutes, you consider licking the plate.

That’s what I think about these peaches! First off, I absolutely adore peaches. It makes me sad that they only have a short season of availability because they’re my favorite fruit! There is nothing like a fresh, in season peach. Did you know an entire peach is only 58 calories? Hello! That makes this dessert a much healthier choice than a pint of Ben and Jerry’s or that piece of cake you’ve been eyeing. I promise you won’t be disappointed with this one!

The first thing I do here is prepare the yogurt which takes just a few minutes. I mix non-fat vanilla Greek yogurt with a bit of honey, cinnamon, and fresh thyme leaves. The thyme leaves might sound weird to you but it gives the yogurt another dimension of flavor and I promise it goes well!

Once I prepare the yogurt, it’s time to glaze and grill the peaches. Make sure your peaches aren’t too ripe. You want them just starting to ripen, not soft. The glaze is made of melted butter, brown sugar, and cinnamon. So easy!

Glaze both sides of the peach and grill them up! You’ll only need a few minutes per side. You want grill marks on the peach and you want them to be hot. You don’t want to burn the peach or overcook it. I put them inside down first, then when I flip them over, I give them one more quick coat of glaze so that the glaze sits in the middle and gets hot and bubbly!

Now all you have to do is tote these delicious peaches back inside and top them with the yogurt you already made. These flavors go so well together and the thyme is the perfect addition to counter-act the sweetness. This is a fantastic summer dessert – it would really round out a dinner with other grilled items. I hope you love this as much as I do!

Grilled Peaches with Honey Herb Yogurt

Ingredients
  

  • 4 fresh peaches
  • 6 tbsp melted butter
  • 2 tbsp light brown sugar
  • 1/2 tsp ground cinnamon

For the Honey Herb Yogurt:

  • 1 cup non-fat vanilla greek yogurt
  • 2 tsp honey
  • 1/2 tsp ground cinnamon
  • 2 tsp fresh thyme leaves

Instructions
 

  • Prepare the yogurt by whisking all ingredients in a small bowl. Refrigerate until needed.
  • Slice the peaches in half, leaving the skin on. Remove the pit.
  • Mix together the butter, cinnamon, and brown sugar for the glaze. Brush a thin coating of glaze on both sides of each peach half. Grill on high for 2-3 minutes per side, until there are grill marks on the peaches and they are hot.
  • Remove from grill and immediately top with the prepared yogurt. Serve hot!
