Remove the dough from the fridge and let rest for at least 30 minutes. The dough will be easier to manipulate at room temperature. Put the balsamic glaze ingredients in a small sauce pan and bring to a boil on medium heat, then reduce to medium-low heat and let simmer for 10-12 minutes. Remove from heat and set aside.
Preheat the oven to 450 degrees. Once the dough is ready, sprinkle the dough with flour and use your hands or a floured rolling pin to shape into a pizza crust. Your crust should fit whatever pizza pan you will be baking on. In a small bowl, mix together olive oil, garlic, and seasonings then brush in a layer onto the crust. In another small bowl, mix together ricotta, mozzarella, and goat cheeses. Spread in an even layer over the olive oil base.
Bake the pizza for 8-10 minutes until the crust is slightly browned. Remove pizza from oven and top with prosciutto slices. Bake for another 6 minutes until the crust is browned. Toss arugula in a bit of olive oil, salt and pepper. Remove pizza from oven, top with arugula, then drizzle balsamic glaze on top.
